DIY Ice Cream Sandwiches
When I think of summer, I always think of ice cream. It’s just automatic. And there really isn’t a better, portable way to enjoy that ice cream than in ice cream sandwiches. I mean, when you’ve got cool, creamy ice cream in between either two soft cookies (or in this case brownies!) can you really go wrong?! Bonus: it’s really simple to make it yourself.
First, you need a brownie mix that is good for an 8 x 8 in or 9 x 9 in pan. You can go boxed mix or homemade for this. I chose boxed mix for ease today, but I certainly would not be opposed to some homemade brownies!
Next, you need 2 8 x 8 in pans. You are going to mix the brownies according to the box or recipe but divide it among two pans instead of one. But before you do, make sure you line your pan with parchment paper. I have pans that have a removable bottom, so I didn’t do this step, but I could have saved a little time if I had. Don’t give yourself a headache: line those pans!
Then, bake the brownies. My box said 38-43 minutes for the mix in one metal pan. I baked my two pans for 15 minutes. Try not to overbake the brownies. A little under is much better than dry. Although, since these are going to be sandwiched with cool, wet ice cream, don’t stress if you overbake it a bit. Just do your best! Once the brownies are baked, let them cool and pop them in the freezer for a least 20 minutes (if they are all the way cooled, an hour if they are still warm going in.)
Line one of the pans you used for baking with criss crossed plastic wrap. Place one of your two sheets of brownie in the center of the pan.
Next grab your tub of ice cream. Again, you could go homemade for this, but I went store-bought because I want this yummy goodness in my belly fast! Scoop it on top of the first brownie sheet. I used about half of a half gallon carton.
Smooth it out. I used the back of the ice cream scooper to do the heavy work and then took an offset spatula to do the rest.
Top with the other brownie sheet and wrap in the plastic wrap overhang. Freeze for at least two hours.
When you are ready to slice, unwrap your giant brownie ice cream sandwich and admire for a moment.
Then cut into reasonable (or not so reasonable, your choice!) sized bars.
Admire your ice cream sandwiches once more, then…devour! Enjoy!
P.S. If you want to save some for another time, feel free to wrap them individually for easy eating later.
