A ‘Good for You’ St. Patrick’s Day Breakfast

For this St. Patty’s Day, we’ll be eating a ‘good for you’ green breakfast consisting of spinach blueberry muffins and a green fruit smoothie!
I found this delicious spinach blueberry recipe on Red and Honey, and because it is pretty much perfect how it is, we just made it according to her recipe! No tweaks needed.
We topped the muffin with a scoop of smoothie that had the consistency of soft-serve ice cream for a fun look and to make it more “cupcake-like”. The kids thought it was pretty awesome. But you could keep them separate too :).
Smoothie Ingredients:
1 banana
handful of strawberries
1/2 pint of blueberries
1/2 large container of plain greek yogurt
2 large handfuls of baby spinach
splash of milk (just enough to get it blended)
drizzle of honey
