Slow Cooker Chicken Teriyaki
I don’t think I have to sell you on the idea of crockpot dinners. We all know the wonderfulness of putting everything in all at once, and it being magically ready to go when little tummies get hungry.
This delicious chicken teriyaki crockpot meal is one of our family’s favorites. It’s fresh with real ingredients and is super delicious. We like to pair the meal with some egg rolls and crab ragoon if we have the time (options: get boxed, make our own, or buy some from the local chinese take out place!).
This recipe comes from Gimme Some Oven (I know, super fun name), and I’ve adapted it slightly to fit our likings :).
2 lbs boneless chicken breasts, cut up into cubes
1 Tablespoon of roasted minced garlic
1/2 cup of honey
1/2 cup of soy sauce (okay, plus a few more splashes to grow on)
1/4 cup of rice wine vinegar
1 Tb chopped ginger
2 Tb cornstarch
Salt and pepper
optional: sesame seeds and scallions
1. Cut the chicken and place in the crockpot. Sprinkle with salt and pepper.
2. Mix together garlic, honey, soy sauce, rice wine vinegar and garlic. Pour over the chicken.
3. Right before you’re ready to eat, stir in the cornstarch to thicken it a bit.
4. Serve over rice or quinoa when ready to eat! You can top with sesame seeds or scallions if your family is into that :).

See this sweet face? Moments after this picture was taken, sweet-faced girl accidentally dumped the bowl over with her arm. Liquid poured down the crack between the counter and the oven. She looked at me, and said, “oooooohhhhh noooooooo. It’s okay, it’s okay” and smiles. I smiled too. Yep, it’s fine. I was wanting to pull the oven out anyway, but was trying to figure out a way to justify it to Jake (because no way do I have the strength to do that on my own). Thanks, love. You inadvertently provided just what I needed.
It’s a semi-sweet, healthy meal that’s sure to please the whole family! 🙂
