If you remember, I have been trying to snack a little smarter lately. And popcorn has been a go-to for me. Here is one of my latest creations: Coconut Popcorn.
When I first made this, Sebastian asked me, “Did you make this?!” He was genuinely, pleasantly surprised that I had come up with this snack all on my own. I have to say I was right there with him. I don’t often make things up. I am a recipe follower. But this one, I did.
And it’s a simple recipe. No blow you away flavors, but it’s a great little healthy snack that doesn’t take long to make. And I have to say that it has a nice “cheesiness” factor without actually having cheese. I don’t know how the coconut does that, but I’m a fan. I love cheese. And if I can get that flavor without the calories, I’ll take it!

1/4 cup popcorn kernels, popped (I use this method)
1 tbsp coconut oil, melted
1/4 tsp salt (more or less depending on your taste)
1 tbsp finely shredded coconut
In a small bowl, mix the coconut oil with the salt.
Then pour the oil mixture over the freshly popped corn.
Toss to coat.
Sprinkle the shredded coconut over top, and toss to coat.
