    Tiff – I made this this afternoon. Yum! I doubled the recipe used 4 cups spinach (Instead of 2 – because it needed to get used). Next time I'm throwing one of those over ripe bananas taking up space in the freezer too. Thanks for encouraging me to get back into baking.

    oh i love the over ripe banana idea! I'll try it too! the kids have been asking me when we're going to make it again,and unfortunately it seems like we always have spinach that needs to get used :0
