For the month of June, we’re sharing dishes that are good for a crowd- easy to make and delicious to eat. Last week Christina shared a grape salad that looked very refreshing!
I’m a huge fan to potlucks, picnics and backyard bbqs, but I tend to over think when deciding what to bring. Something tried and true? Something unique to try out on everyone? Do I choose a veggie dish (because no one ever brings enough of those), a fruit dish, an appetizer? The other day I just picked up a couple of pre made pizzas and popped them into the oven a few minutes before we needed to leave. It was a hit, particularly among the kids, and it was so easy. I’m tempted to just do that all summer :).
Another idea, coming in number two in my book, is meat and cheese roulades. If you ever come to my house for lunch in the summer, you may be served one of these, but more as a sandwich.
Pack of tortillas- we like the spinach or sun-dried tomato flavored ones, but original would be fine too
Lunch meat and cheese of your choice
Some kind of flavored cream cheese (we used chive and onion)
Lay out your tortillas and spread a thin layer of cream cheese, nearly to the edges.
Add a leaf of romaine down the middle.
Next, pile on cheese and meat.
Finally, add sliced tomatoes to the top and roll them up!
Slice into mini-sandwiches and stack them on a plate!
Bonus: This dish is a perfect one for beginning cooks- perhaps your child can make these while you’re getting everyone else ready to go! 🙂
