DIY Salad Bar for Dinner
Well it’s finally warming up outside and I’m able to consider making something for dinner other a nice hot pot of soup! A few weeks back I served salad for dinner, and you should have heard my boys complain! “Salad for dinner. Is that all we are having???” And then I didn’t hear anything but munching for a long long time. In fact, this ended up being popular enough that when I was stumped with my menu planning last week my five year old actually suggested it! (Full Disclosure – his first suggestion was hotdogs, but salad was number two!)

Here’s how we do “salad bar for dinner” at my house. Everyone starts out with a big plate of lettuce, and I put some of the following yummy options on the table to pick from, and everyone fills up their plate… usually more than once. (We don’t have all of these options at the same dinner because then our table, and my grocery budget, would collapse. This is just to get you thinking!)
ground beef or turkey with taco seasoning
Other Protein Options:
chunks of cheddar
hard boiled or fried eggs
roasted walnuts or almonds
carrot strips (I use my peeler)
sugar snap peas
slightly cooked broccoli
thinly sliced pear
You can even make your own croutons!
For dinner tonight I served lettuce with chicken, cheese, mushrooms, tomatoes, carrots, craisins, apples, and eggs. Everyone had seconds and declared “This is good!” What’s your favorite type of salad?
