Three Ingredient Pumpkin Muffins
It finally feels like fall around here and this week we stayed in the spirit with some delicious pumpkin muffins. I love serving muffins when we’re having soup for dinner (another fall favorite), but sometimes there is just not a lot of time for baking, which is when this simple recipe comes in handy. This week the kids and I made a double batch so they could bring some in for their teachers too.
1 yellow cake mix
1 14oz can pumpkin (the can in the photo is larger because I made a double batch)
1 1/2 tsp. pumpkin pie spice (or 1 tsp. cinnamon, 1/2 tsp nutmeg, and 1/4 tsp cloves)
Mix ingredients together. These muffins are going to be more “cakey” than regular muffins, so don’t be timid about your mixing. I used my mixer, which I would not do with regular muffins.
Spoon them into greased muffin tins and bake at 350 degrees for 20-25 minutes.
Makes one dozen.
