Mix and Match No-Bake Cookies
I married a man who adores no-bake cookies. When we lived in Kenya for a short while, we had no oven, so I was out-of-luck when it came Christmas time and I wanted to bake some delicious remind-me-of-home cookies. But, guess what we could make.
Yep, the no-bake cookie.
What’s particularly interesting about this situation is that my husband also dislikes chocolate. Wait, you say, isn’t cocoa a lead-role kind of ingredient? It confuses even him why he loves these cookies so. He recognizes, though, that they would probably be way better without chocolate.
It’s been awhile since I’ve made no-bake cookies because I’ve said good-bye to corn syrup. I’ve read enough articles to give me a reason to get rid of it– something I’ve wanted to do for awhile because eating anything with corn syrup makes my teeth feel disgust-o. Anyway, how do you make no-bake cookies without corn syrup? There are ways.
For his birthday party, I decided to revive the no-bake cookie and make a variation that was sure to please. Presenting the no-bake, no-chocolate cookie.
1/2 cup butter (remember, no margarine- only the real stuff for this one!)
1 3/4 cups of sugar
2/3 cup of evaporated milk
1-2 tsp vanilla
1 cup of peanut butter
1 small box (3.5 oz) of cheesecake pudding mix
3 1/2 cups of quick oats
Melt the stick of butter over medium heat. Add the sugar and evaporated milk, stirring constantly until the sugar is dissolved. Bring to a boil and let bubble for a minute or two (this is an important step!). Add the vanilla, peanut butter and pudding mix. Stir really well over low heat. After everything is nice and hot, add the quick oats, slowly. Feel free to add less or more, depending on the thickness of the batter.
Scoop out varying sizes of batter and let cool on wax paper either on the countertop or in the fridge.
Makes so many that you probably won’t want to make them again for awhile.
- You can substitute any other flavor of pudding mix for the cheesecake mix.
- Add only 1/2 cup of peanut butter if you want the cheesecake taste to be bolder.
- Be a little crazy and add 1/2 cup of coconut flakes!
- You can simply take out the peanut butter altogether and have peanut-butter-less no-bake cookies!
- Why not dip some of these in chocolate for those who DO like the chocolate?
