Eat: Irish Soda Bread
This is me.
Well, this is me a few months ago when I was still pregnant. I am not Irish. What?? Shocked. I know. But I’m told that my kids are…a little anyways. My hubby says less than 12%, but that’s a whole lot bigger than my whoppin’ 0%. So, I’m going to take that as my cue to have the motivation to celebrate St. Patrick’s Day.
And so I introduced my boys to their first taste of Irish food, Irish Soda Bread. Well, technically only one boy tasted it since the other is on a strict momma milk diet :).
If you’ve never made this or eaten this before, it comes together really quick and tastes like a giant scone.
I’d say those are two good reasons to give this recipe a go. And if you can pretend you are teaching your kids something about their heritage at the same time, then even better.
Irish Soda Bread
from Gimme Some Oven
2 cups all-purpose flour
2 Tbsp. sugar
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
3 Tbsp. butter
1/2 cup raisins or dried currants
3/4 cup buttermilk

My ball was a touch dry, so next time I think I’ll up the buttermilk just a smidgen. |
