Eat: Leftover Turkey Roundup
I know it’s before Thanksgiving, but I’m thinking about leftovers already. I’m an overplanner when it comes to food, so we always always always have leftovers. Eating them as-is is easy enough to do, but sometimes it fun to get a little creative with the extras.
So here are some fun recipes I’ve found for leftover turkey. Have at it!

Holidays are about comfort food, and nothing says that like Shepherd’s pie. And the great thing about this is that it’s a lightened up version…to make up for all of that pie your ate the day before. 🙂
This is a fun twist on the chicken noodle soup. I read somewhere that soup is a great diet food because it fills you up without being too calorie laden. This ones a good choice for that.
After the big meal, I’m sure you don’t want to make another pie crust. So this takes all the goodness of the pot pie, and puts a biscuity crumble on top. The original recipe calls for chicken, but your can definitely substitute your turkey here. Please do!
Sometimes you just want a sandwich. And this one sounds particularly yummy with tangy herbed goat cheese paired with the cranberries and turkey. Yum!
6. Turkey Chili
It’s turkey. It’s chili. Sounds good.
This original recipe also calls for chicken, but again, subbing turkey would be a snap. And pairing turkey with cheesy noodles sounds like a winner to me.
This creamy soup just looks and sounds delicious. It’s a combo of potatoes and turkey. Talk about classic.
I don’t know about you, but I’m starting to look forward to Friday. And not because of the “deals” to be had but the leftovers!
